In the early 20th century, Goan cooks and nannies in Bombay homes revolutionised Parsee kitchens. They introduced a coastal soul to traditional Persian-Gujarati recipes—bringing the sharp kick of toddy vinegar, the richness of coconut milk, and a mastery of seafood.
Chef Cyrus will showcase how Portuguese-Goan techniques—from the sharp kick of toddy vinegar to the silky richness of coconut milk and the freshest seafood—transformed Parsee cuisine into something even more vibrant and soulful.
