This very popular of Parsee desserts is
usually served at festive occasions and
weddings where, incidentally, it is eaten
before the main meal is served or even
as afters. It is a unique baked custard
made by slowly reducing milk to a condensed
form, which is then blended with eggs
and sugar and flavoured with nutmeg, crushed
cardamom & rose extract, steamed like
a crème caramel served warm.

Goa's most popular dessert has Portuguese
origins. A pancake batter made with coconut
milk and flavoured with nutmeg and is
baked in layers. The entire process traditionally
takes close to six hours. Served sliced
and warm. Best accompanied by a scoop
of vanilla ice cream (supplement 50P).

This delicious ice cream is made from
sun dried Hunza apricots, the flavour
of which are much sweeter than their European
counterpart. The apricots are gently cooked
until almost caramelised, prior to being
blended into the ice cream base.

rich ice cream flavoured delicately with
vanilla.
KULFIS
Kulfis are traditional Indian style ice
creams made very slowly with the gradual
condensing of milk and sugar, and then
flavoured with either fresh fruit pulp
or aromatic extracts. Ours are made exclusively
in small batches and therefore will not
resemble conventional Kulfis.

Extract of rose is very popular in India.
Rose petals are mixed with lump sugar
and placed in glass jars under direct
sunlight for weeks until natural rose
syrup is formed. The flavour is greatly
sought after by the Muslims of India and
we have tried our very best to replicate
